Description

Fresh and light lettuce wraps filled with shrimp, avocado, mango, and a zesty lime dressing.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 810 large lettuce leaves (butter or romaine)

Instructions

  1. In a medium bowl, combine the shrimp, avocado, mango, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice and olive oil. Season with salt and pepper.
  3. Pour the dressing over the shrimp mixture and toss gently to combine.
  4. Spoon the mixture into the lettuce leaves.
  5. Serve immediately.

Notes
