Description

A refreshing coleslaw with the tartness of cranberries and the sweetness of apples.


Ingredients

  • 1 bag (14 ounces) coleslaw mix
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh dill
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped fresh apples
  • 1/2 cup dried cranberries

Instructions

  1. In a large bowl, combine the coleslaw mix, red cabbage, green cabbage, parsley, and dill.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss to coat.
  4. Gently fold in the chopped apples and dried cranberries.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a tangier dressing, add an extra tablespoon of apple cider vinegar.
  • You can substitute Greek yogurt for half of the mayonnaise for a lighter version.
