- 2 large eggs
- 1/4 avocado, sliced
- 1 slice toast, cut into cubes
- 1 tablespoon milk
- Salt and pepper to taste
Instructions
- Whisk eggs with milk, salt, and pepper in a bowl.
- Heat a non-stick skillet over medium heat.
- Pour egg mixture into the skillet.
- Cook until edges begin to set, then gently lift edges and tilt pan to allow uncooked egg to flow underneath.
- Sprinkle toast cubes and avocado slices over half of the omelette.
- Fold the other half over the filling.
- Cook for another minute until cheese is melted and omelette is cooked through.
- Slide onto a plate and serve immediately.
Notes
- You can add a sprinkle of red pepper flakes for a little heat.
- Use your favorite type of bread for the toast.
