- 2 large eggs
- 1/4 avocado, sliced
- 1 slice whole wheat toast, cubed
- 1 tablespoon milk
- Salt and pepper to taste
Instructions
- Whisk eggs with milk, salt, and pepper in a bowl.
- Heat a non-stick skillet over medium heat.
- Pour egg mixture into the skillet.
- As eggs begin to set, arrange avocado slices and toast cubes over one half of the omelette.
- Fold the other half over the filling.
- Cook for 1-2 minutes more, until eggs are fully cooked.
- Slide onto a plate and serve immediately.
Notes
- You can add a sprinkle of red pepper flakes for a little heat.
- Use your favorite type of bread for the toast.
