Quick and easy BBQ chicken quesadillas made with just three ingredients.

- 1 cup shredded cooked chicken
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
- In a bowl, mix the shredded chicken and BBQ sauce.
- Lay out two tortillas. Spread half of the chicken mixture evenly over each tortilla.
- Sprinkle half of the cheese over the chicken mixture on each tortilla.
- Top with the remaining two tortillas.
- Heat a large skillet or griddle over medium heat. Cook each quesadilla for 3-4 minutes per side, until golden brown and the cheese is melted.
- Cut into wedges and serve immediately.
Notes
- You can use rotisserie chicken for extra convenience.
- Adjust the amount of BBQ sauce to your preference.
- Add other fillings like onions or peppers if desired.
