Description

Quick and easy BBQ chicken quesadillas made with just three ingredients.


Ingredients

  • 1 cup shredded cooked chicken
  • 1/2 cup BBQ sauce
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. In a bowl, mix the shredded chicken and BBQ sauce.
  2. Lay out two tortillas. Spread half of the chicken mixture evenly over each tortilla.
  3. Sprinkle half of the cheese over the chicken mixture on each tortilla.
  4. Top with the remaining two tortillas.
  5. Heat a large skillet or griddle over medium heat. Cook each quesadilla for 3-4 minutes per side, until golden brown and the cheese is melted.
  6. Cut into wedges and serve immediately.

Notes

  • You can use rotisserie chicken for extra convenience.
